Okay, so we decided to make one of the cake mixes we’ve had around for awhile. Trouble was, we had no frosting, or powdered sugar, or whip cream, or corn syrup. So we couldn’t make regular frosting or White Mountain frosting (which is a whipped egg-white based frosting, and VERY good). So my creative juices started to flow.
We DID have brown sugar. And what goes better with brown sugar syrup than peanut butter? Hmmmmm…
So I invented…
(drumroll please)
Caramel Mountain Frosting
1 cup firmly packed brown sugar
1/4 cup water
1 cup peanut butter
2 eggs
1 tsp vanilla
Mix brown sugar and water in a saucepan and bring to a boil. Boil for 5-10 minutes.
While that’s boiling, separate eggs – give yolks to the dog (or whatever you want to do with them). Whip whites to stiff peaks.
Add peanut butter to boiling saucepan and stir slowly. When it’s all mixed in, pour mixture into egg whites and stir it in (the boiling gloop will cook the egg whites). Allow to cool some before spreading over whatever you’re putting it on.
Makes enough for one 13X9 pan of cake, brownies, or whatever.
We used it on our cake mix cake. Pink cake. That was Lunch Buckets idea.
And how did it turn out? A mouthwatering success, if I do say so myself. I want to try it on bunt cake or brownies now. Yummmmmm!
